Full-Time SPECIALIST SOUS CHEF – STEAK , SEAFOOD AND KITCHEN TRAINING

Job Description

Wahoo Seafood & Grill is seeking an experienced Specialist Steak and Seafood Chef to join our waterfront restaurant in Havannah Harbour, Vanuatu.

The successful applicant will be responsible for preparing and presenting premium steaks, fresh seafood and other high-quality dishes while maintaining consistent standards during busy service periods.

Key responsibilities include:

  • Preparing and cooking premium steaks to requested temperatures
  • Filleting, portioning and preparing fresh fish and seafood
  • Maintaining consistent recipes, presentation and portion sizes
  • Assisting with menu development and seasonal specials
  • Monitoring food costs, stock levels, ordering and kitchen wastage
  • Maintaining high food safety, hygiene and cleaning standards
  • Supervising daily kitchen preparation and service
  • Training and mentoring junior and local kitchen staff
  • Ensuring kitchen equipment and work areas are properly maintained
  • Working closely with management and front-of-house staff

Applicants should have at least five years of professional kitchen experience in a busy restaurant, hotel or resort, with proven experience in steak and seafood preparation. A recognised culinary qualification is preferred, although substantial professional experience will also be considered.

Applicants must be reliable, organised, able to work under pressure and communicate effectively in English. International hotel, resort or quality restaurant experience will be highly regarded.

This is a full-time position based in Havannah Harbour. Salary and employment package will be negotiated depending on qualifications and experience. Accommodation may be available for the successful applicant.
