Duties & Responsibilities

  • Organizes kitchen operations and prepares and serves a range of dishes, whilst supervising junior members of the Kitchen Brigade.
  • Prepares, Cooks and serves all menu dishes, with the main emphasis being for the hot a la Carte & Buffet & Function Foods.
  • Develop and write standard recipes.
  • Develop new dishes and products.
  • Ensure that outstanding culinary technical skills are maintained.
  • Establishes and maintains effective employee working relationships.
  • Assist with organizing special events and special food promotions.
  • Maintain comprehensive product knowledge including ingredients, equipment, suppliers, markets, and current trends and make recommendations for appropriate adjustments to kitchen operations accordingly.
  • Attends and participates in training sessions as scheduled.
  • Prepares in advance food, beverage, material and equipment needed for the service.
  • Cleans and re-sets his/her working area
  • Implements the hotel and department regulations, policies and procedures including but not limited to:
    o House Rules and Regulation
    o Health and Safety
    o Grooming
    o Quality
    o Hygiene and Cleanliness
  • Works with Supervisor in manpower planning and management needs
  • Works with Supervisor in the preparation and management of the Department’s budget
  • Adhere to local regulations concerning health, safety, or other compliance requirements, as well as brand standards and local policies and procedures.

Selection Criteria

  • 3 years experience as a chef or an equivalent combination of education and experience.
  • Diploma or Vocational Certificate in Culinary Skills or related field.
