Full-Time HEAD OF LABORATORY
Job Description
We are looking for an experienced chemical engineer to develop new processes, methodologies and train our staff. 83 Islands Distillery is a growing local manufacturer and our growth require more emphasis on quality control, analysis and the use of very specialised laboratory equipment in order to maximise our production, expand the local sugarcane industry and make higher quality products. We are looking for someone that can help us acquire new equipment and has experience using them in order to train our current staff on how to use them.
- Develop, implement and instil various processes to use our lab equipment, calibrate them, and do proper maintenance.
- Coordinate with the maintenance staff to maintain a clean work environment in the lab.
- Create sustainable methodologies to measure reliably our fermentations (Brix, sugar content, organic/inorganic nitrogen, etc), distillations and ageing barrels.
- Adjust our fermentation Ph and nutrient level to create an optimal yeast environment based on the specification of the yeast manufacturer or our specific requirements.
- Measure yeast health (viable yeast count).
- Maintain proper records and help us improve our data gathering app.
- Make equipment purchase recommendations based on our needs (Gas Chromatography, IR, Mass Spec, HPLC, etc).
- Use and train our laboratory staff to use our new equipment (Gas Chromatography, IR, Mass Spec, HPLC, etc)..
- Coordinate with our field staff to ensure measurement of sugar in the sugarcane fields for proper coordination of the cutting and crushing season.
- Use our Rotovap and small pot still to do small-scale tests and flavour extractions.
- In coordination with the production team prepares small-scale infusions.
- In coordination with the barrel ageing team, make sure we have proper sampling and record keeping of said samples.
- Quality control on the cleaning solutions ratios used in our production equipment CIP lines.
- Quality control and sampling of our boiler feedwater and condensate return.
- Train our in-house chemist to ensure organisational memory and continuity.
