Assistant Distiller

83 Islands Distillery is looking for a full-time assistant distiller to work at our Stella Mare, Port Vila location in Vanuatu. The assistant distiller will help the head distiller in the daily operation of the distillery and will be responsible for overseeing the production line, quality control and managing staff. We are looking for a motivated and responsible person able to work in an evolving environment.

83 Islands Distillery is a Distillery located in Port Vila, Vanuatu (Stella Mare). We are a new business making authentic high quality rum and other spirits for the export and tourism market.

Job Description

The assistant distiller job consists of operating the different machines and equipment in order to prepare the fermentation and distillation batches. It consists of operating machines such as boilers, chillers, pumps and steam generators. The job might sometimes require long hours of work and at times outside normal business hours.

The team member will be helping the planning and execution of distillations, writing and logging different information during the production process, involved in the inventory management and respect the rules and regulations related to the production of alcohol.

In the course of a regular day, and part of the distillation process, the assistant distiller is expected to be able to climb, balance, stoop, kneel, crouch, crawl, reach, stand, walk, push, pull, lift, grasp, and complete repetitive motions. He or she must be able to sit and stand for extended periods of time. Willing to complete any other task deemed appropriate by the management team. The assistant is expected to stay calm under pressure and respect safety rules at all time.

Key Responsibilities

Executing day-to-day operation of the distillery

The role of the assistant distiller will be to execute and assist in all the day-to-day operations and procedures of the distillery including fermenting, distilling, bottling, labeling, packaging. Running and regulating the distillations according to the pre-established planning, opening and closing the distillery, starting and stopping the various equipment and machinery. Assist in weighing, filling, labelling and storing of barrels. Loading and unloading vehicles. Prepare and move the different materials used in the production.

Maintain Process Logs

Assist in data entry into our internal batch production software. During the course of the day, the assistant distiller is expected to log and note all the process steps that are required.

Maintain Safety Standard

Ensuring health and safety rules and procedures are adhered to at all times on site. Safety is very important and working in a distillery can be hazardous if the safety rules are not followed. It is the job of the assistant distiller to make sure all the safety instructions are followed.

Maintain Hygiene and Food Safety Standards

It is the job of the assistant distiller to maintain the highest levels of hygiene and food safety requirements. In coordination with the distillery cleaner, make sure all equipment used during the day have been sanitised before leaving the site.

Key Skills

Good communication skills.
Ability to use electronic devices such as computers and tablets.
Must be methodical, logical and detail orientated.
Some mathematical skills.
Stay calm under stress.

Criteria

High school or higher education
At least 2 years of experience in a work environment.
Good written and verbal communication skills
Must speak English and Bishlamar or French. Bilingual a minimum and Trilingual is a strong advantage.
Willingness to learn new skills and work long hours.

Additional notes
Experience brewing or quality control is a plus.
Experience driving a forklift is a plus but not essential.
Proven ability to work with little to no supervision and be able to follow the directions precisely.
Science/technical profile is a plus but not essential.
Knowledge in manufacturing or food industry is a plus but not essential.
Subject to background check, no problem with alcohol drinking
